The harvest
Olive by olive, by hand, into a wicker basket. Only whole fruit.

The millstone
The olives are crushed slowly on stone, without heat, so the flavor stays.
One pressing
Green-gold oil that flows only once. Whatever does not run free stays out of the bottle.

The glass keeps the oil from the light, just as the stone kept it at the press.
